Welcome to our family farm in Orkney
Have you ever eaten our buffalo? Imagine a really lean, deep red, grass-fed beefy beef. If you like the taste of a good steak or beef burger, you’ll love a buffalo burger.
1lb of Orkney Buffalo steak mince
1 finely chopped small onion
Drizzle of olive oil to fry
A fresh baked roll from one of Orkney's fine bakeries
Lettuce and tomato
Sauce of your choosing
1/ Sauté the onions in the olive oil over medium-high heat until translucent. Turn off the heat and let it cool.
2/ Combine the Orkney Buffalo steak mince with the cooled onion.
3/ Form burgers with the meat, making 4-6 depending upon how big you like them!
4/ Fry the burgers in a little olive oil on a medium heat, for about 6-7 minutes per side.
5/ Serve in a fresh roll with some lettuce, tomato and your favourite sauce. It's red sauce in the Schoolhouse kitchen for the kids, while the grown-ups opt for chilli sauce or an onion chutney.
(N.B. Mr Buffalo Bremner says there must be an "air-o-greas" on those rolls too)
